Preheat oven to 350 degrees F (175 degrees C). Grease a roasting pan with olive oil. Sprinkle roast beef fillets with salt and pepper. Place in the prepared pan. Bake for 25 minutes, or until desired doneness is reached. Cool slightly. Cut into thin strips. In a large bowl, combine chopped lettuce, roasted beef strips, cherry tomatoes, Parmesan cheese, blue cheese, red wine vinegar, Dijon mustard, and garlic. Season with salt and pepper to taste. Serve chilled or at room temperature.
