Instructions:

  1. Preheat the oven to 200 degrees Celsius.
  2. Cut the roast beef fillet into 4 equal pieces. Season with salt and pepper. Heat a tablespoon of olive oil in a large frying pan over medium heat, and cook the beef for 3-4 minutes per side until browned all over. Set aside. 3. Roughly chop the mushrooms, and crush the garlic cloves using a garlic crusher or a knife. Heat another tablespoon of olive oil in the same frying pan over medium heat, and cook the mushrooms and garlic for 5-7 minutes until softened. Add the flour, and cook for 1 minute more. Deglaze with red wine, scraping any browned bits off the bottom of the pan with a wooden spoon. Simmer for 5 minutes until slightly thickened. 4. Return the beef to the pan, spooning over some of the mushroom sauce. Transfer to an oven-safe dish, and bake in the preheated oven for 10-15 minutes until cooked to your liking. Serve with rest of mushroom sauce and some mashed potatoes or boiled rice on the side. Enjoy!
