This dish is perfect for a winter's night as it is both comforting and warming. The roast fillet is full of flavour, and can be served with either mash potato or rice.

Ingredients:

-1kg cold roast beef fillet -1 onion, chopped -2 cloves garlic, crushed -1 tablespoon olive oil -2 tablespoons red wine vinegar -salt and pepper to taste

Method:

  1. Preheat the oven to 200 degrees Celsius.2. In a bowl, mix together the onion, garlic, olive oil and red wine vinegar.3. Place the beef fillet in a large roasting tin and spread the onion mixture over the top.4. Season with salt and pepper, then bake in the oven for about 45 minutes or until cooked to your liking.5. Serve with mashed potato or rice. Enjoy!

-2 tbsp plain flour -50 ml red wine vinegar -250 ml beef stock

Instructions:

  1. Preheat the oven to 240°C (475°F/Gas 9).
  2. In a large roasting tin or casserole dish, toss the carrots, onion and garlic with the olive oil. Season with salt and pepper and spread around the bottom of the dish. Place the beef fillet on top and surround with the herbs and bay leaves. 3. Roast in the oven for 25 minutes for rare or 30 minutes for medium rare, then remove from the oven and allow to rest in a warm place for 10 minutes before carving into thin slices. 4. To make the gravy, mix together the flour and vinegar in a small bowl then gradually stir in the beef stock until smooth. Heat through gently on the hob until thickened and bubbling. Season to taste with salt and pepper if needed. Serve alongside the sliced cold roast beef fillet.
